It sits in the cell walls of the shiitake, the way a related compound sits in human skin.

Under UV, ergosterol becomes ergocalciferol: vitamin D2. Skin does the same job with sunlight.

Because D3 in supplements is almost always made from lanolin — sheep’s wool grease — and is therefore not vegan. D2 from UV-exposed shiitake is. The honest trade is that gram for gram D3 raises blood levels more efficiently, which is why this is dosed at 2000 IU rather than 400.
