Maitake (Grifola frondosa) is a gift of nature from Japanese culture, valued by people who look after their gut health and a normal metabolism. It grows on the trunks of deciduous trees in clusters of overlapping caps, like a dense fan. Its fruiting bodies hold bioactive polysaccharides and glucan-protein complexes, the D and MD fractions above all. Scientists have studied it for more than 30 years, and its aroma is rich enough for the dried mushroom to be used as a seasoning.
